History

Our families have been engaged in viticulture for many years. The love for wine and vineyards has been passed from generation to generation. Today’s seat of the Jedlička & Novák family winery is situated in Bořetice, in the Velké Pavlovice wine area. It was established in 2004 in order to follow long family experience.

It is easy to characterize the winery because it was established and it has worked observing the following clear principles:

  • It processes only grapes from its own vineyards situated in the Terasy and Čtvrtě vineyard sites in Bořetice. The vineyards cover 35 hectars. They are vineyards of the first-class position, with clay-sand soil rich in magnesium. By the way, there have been notes of vineyards on this site since 1355 and, since then, there have been vineyards almost all the time.
  • The varietal composition of the vineyards is based on long experience upon cultivating the following white wine varieties: Pinot Blanc and Pinot Gris, Sauvignon, Gewürtztraminer, Rhine Riesling and Welshriesling, Neuburger and newly also Chardonnay (in a small quantity). And the following red wine varieties: Blauer Portugieser, Pinot Noir, Saint Laurent, Lemberger, André and, interestingly enough, also Cabernet Sauvignon.
  • Wine production takes place exclusively in tanks of stainless steel; red wine gets mature in French oak barrels for a period of six months. White wine is processed using the method of controlled fermentation.
  • The production area of the Jedlička & Novák Family Winery is based on historic premises of VINOPA, a famous cooperative, established in Bořetice in 1932 and reconstructed completely in 2005 while preserving its original shape. Production and warehouse areas were built newly. The whole premises are among the most modern ones in the Czech Republic and, in their category, the premises are comparable on an international scale.
